I think that has to do with heat, nutrient, or water stress. Commercial tomatoes have been bred to have tougher skins, specifically, for shipping. I haven’t had the time to really dig into why my tomatoes sometimes are tough and sometimes delicate.
Commercial tomatoes are usually shipped unripe, so they’re harder and I think that’s how they survive shipping. Tomatoes I’ve grown myself and received from other people’s gardens have always had thicker, tougher skins than the ones from the store.
