To be fair, they were probably about the best carrots I have ever eaten.
I’m pretty drunk so I can’t remember the coating they put on them. Some kind of ground pistachio, oil, and something something else.
The dichotomy of vegetarian food… vegetables are the sorriest of food types, but the people who eat them exclusively come up with amazing accoutrements to make them palatable.


I disagree that vegetables are the sorriest food type, and I’m neither vegan or vegetarian.
The perception that veggies suck comes from people not knowing how to make them (which is how I grew up).
My favorite vegetable dish is ratatouille. On its own it’s fantastic, paired with something like crispy oven-baked chicken with basil, parm and panko it really shines.
Sweet chili glazed carrots are incredible.
As are roasted asparagus with balsamic and olive oil.
And potatoes… Well now, that’s a whole 'another thing!
The best way to prepare potatoes is by roasting a lamb on top of it for 3+ hours…
Yeah, that was a pretty uncharitable take on my part. I love all those you listed.
You have a point… Most veggies as made/served do suck…
