You may be able to dual boot if you ever felt like it, I’m not personally familiar with a lot of apple, but the arm chips are nice for their power consumption and a nice way to develop arm apps for pc

have you looked into Calyx? They have a pricing model that costs less because they are a 501c3 nonprofit
Why not just use Calibre?
Both of them also like to lease out their software and not actually let you own anything, expecting you to be happily complacent.
